Shorty Tang Noodles

Project Description

In 2007, prior to becoming the Times restaurant critic, Sam Sifton Wrote Of the Dish : “[Tang’s] sesame noodles were soft and luxurious, bathed in an emulsified mixture of sesame paste and peanut butter, rendered vivid and fiery by chili oil and sweetened by sugar, cut by vinegar, made fantastic by technique.” After Shorty died in the ’80s, the restaurant closed, and imitations of the dish have continued to surface. Other members of the Tang family have also done pop-ups in the past .

FISH CHEEKS

Project Description

FISH CHEEKS Ohm Suansilphong, a chef who worked at the highly rated Nahm in Bangkok, has joined his brother, Chat Suansilphong, a chef who worked for Tom Colicchio, to help bolster New York’s somewhat scant offering of reasonably authentic Thai food. The room, decorated with Thai motifs, is a glowing, golden affair. And their concise, creative menu of mostly family-style dishes is heavy on seafood (coconut crab curry with betel leaves, crispy garlic branzino) and frequently fueled by tiny, potent bird’s-eye chiles. “We’re not dumbing down the dishes or the spice levels,” said Chat, adding that they are grinding their spice mixtures

Many of the recipes and preparations at Kiin date back centuries ago to early Thai history, and are still used by Bangkok locals today. Kiin will offer several specialty dishes that even the most experienced diners will consider rare to find outside of Thailand.
